![]() Shredded Mole Chicken (Crockpot) #Surprise Recipe. I am weird and don't like gobs of chocolate chips in my cookies so I only used 1 cup for the entire batch but feel free to up it to 2 cups! Have you tried pudding cookies yet? What flavor combo is your fave? These cookies got 2 thumbs up from us all - thankfully, including our guests! - and I loved that it made a large batch so we never ran low. The flavor of the pudding is very subtle - perhaps not even note worthy - but I've only tried vanilla (a basic flavor component to chocolate chip cookies anyways!) so I'll have to try a few more flavors before claiming an official opinion on that :) and it definitely delivered! Even a week later, they were still as soft as they were the day they were baked. Using pudding mix in your cookies promised to make some serious soft baked cookies. I knew we needed some cookies (when we do NOT need cookies?!) so I took the opportunity to try out the pudding cookies everyone in the blogosphere has been raving about. I put a basket of goodies in their room plus left stuff out on the counter. I wanted to make sure they were comfortable and well fed (of course!) so I made a point to prepare some snacks to have on hand. This scoop is small, only a tablespoon.Jason's parents made the trek from Texas to North Carolina a few weekends ago to visit us in our new home. The cookie scoop is optional, but using a scoop help keep the cookies a uniform size. Parchment paper is great for lining baking trays. If you only own 2 trays, be sure the trays are not hot when you add another batch. You'll need 4 baking trays to make the entire batch. If you prefer, you may add less chocolate chips, about 1 ½ cups. I used 2 cups of semi-sweet chocolate chips and my cookies are loaded with chocolate (how I like them). I highly recommend real extract and not flavoring or imitation vanilla. You'll need 1 teaspoon of vanilla extract. EGGSĪnd eggs to hold the cookies together, of course. (1 cup butter, ¾ cup white sugar, ¾ cup brown sugar, 1 teaspoon vanilla) Add in eggs one at a time. In a stand up mixer bowl cream butter, sugar and vanilla. Preheat oven to 375☏ and line a cookie sheet with parchment paper. You'll need ¾ cup of brown sugar (light or dark) and ¼ cup of granulated sugar. For high altitude instructions see recipe notes below. This recipe calls for more brown sugar than granulated sugar. While most recipes for cookies call for unsalted butter, I personally use salted. Be sure to purchase the 3.4 ounce size, and not the larger box! If you buy the large box, simply weight 3.4 ounces to add to the recipe. You'll need a package of dry vanilla instant pudding mix. I always add a bit of salt to my cookies to bring out the flavors. The baking powder makes these cookies rise, but spread very little. This recipe calls for 1 teaspoon of baking powder and ¼ teaspoon baking salt. You'll need 2 ⅓ cups, which is 298 grams. The texture is light and a bit more "cakey" and chewy that the original chocolate chip cookie.
